VINIFICATION
The grapes are hand selected in the vineyard. Following initial pressing, the must + skins are left to rest for 36 hours at room temperature. The temperature is increased and fermentation then takes place at a controlled temperature of approximately 30°C for the next few days in stainless steel tanks. Maceration lasts 7 days.
Malolactic fermentation occurs in November.

REFINING IN WOOD
3000 L Slavonian oak casks.

CLARIFICATION
Egg whites, gelbentonite

TASTING NOTES
Medium body, with garnet highlights, wonderful scent of ripe prunes. On the palate it is pleasant with soft tannins. This is a really well-balanced wine, rounded and smooth, and expresses the typical characteristics of the Nebbiolo varietal and its terroir.
